Working in collaboration with the IRTA food safety unit, CENTA works to offer an excellent and effective service to companies.
OBJECTIVES
- Improvement of food safety by studying the shelf-life of the product.
- Improvment of techniques to detect food pathogens, microorganisms with technological interest, residues and chemical contaminants.
- Increase understanding of microbial ecology in food sytems and the study of the use of biomarkers in animal tissues.
- Study of the effects of new processing and preservation technologies on the fisiology of microorganisms and on the secondary metabolites produced by the microflora in food products.
- Increase understanding of predictive microbiology to design and validate new industrial processes.
